Do you ever feel like you’re running out of ideas of what to cook these days? Then you eventually give up even trying, because you can’t be bothered looking for new recipes (that don’t use too many ingredients) ...

Well, look no further!

This easy and highly nutritious lunch recipe has just about everything we love, all in one bowl. Or, in this case - an awesome lunch container we’ve been using on a daily basis lately. There’s lots of veggies, protein rich Teriyaki wild salmon, and a refreshing kick from the pickled ginger. Oh ... and we hope you appreciate the added avocado, because what bowl is complete without avocado?!

1 Serving

  • 1 cup sautéed spinach

  • 1/2 cup cooked black rice

  • 1/2 lb Teriyaki wild Salmon

  • 1/4 cup Edamame

  • 1/4 cup Shredded carrots

  • 1/2 avocado, sliced

  • 1 Tbsp pickled ginger

  • Scallions, thinly sliced for garnish

  • Sesame seeds, for garnish

Instructions:

  1. First, sauté your spinach in a pan with olive oil until cooked, this will only take about 4 minutes.

  2. Then, you can assemble your bowl.

  3. Add the cooked black rice to your bowl first, and then the edamame, spinach, shredded carrots, avocado and pickled ginger.

  4. Top off your bowl with the wild salmon that was cooked in Teriyaki sauce, and then garnish with the scallions and sesame seeds.
