This easy and highly nutritious lunch recipe has just about everything we love, all in one bowl. Or, in this case - an awesome lunch container we’ve been using on a daily basis lately. There’s lots of veggies, protein rich Teriyaki wild salmon, and a refreshing kick from the pickled ginger. Oh ... and we hope you appreciate the added avocado, because what bowl is complete without avocado?!
1 cup sautéed spinach
1/2 cup cooked black rice
1/2 lb Teriyaki wild Salmon
1/4 cup Edamame
1/4 cup Shredded carrots
1/2 avocado, sliced
1 Tbsp pickled ginger
Scallions, thinly sliced for garnish
Sesame seeds, for garnish
First, sauté your spinach in a pan with olive oil until cooked, this will only take about 4 minutes.
Then, you can assemble your bowl.
Add the cooked black rice to your bowl first, and then the edamame, spinach, shredded carrots, avocado and pickled ginger.
Top off your bowl with the wild salmon that was cooked in Teriyaki sauce, and then garnish with the scallions and sesame seeds.
