Healthy Snack Recipe : Chia Seed Pudding

Chia Seed Pudding has become a staple in our morning routine for multiple reasons.

For starters, Chia seeds are filled with protein and fiber, making it great to eat in the morning because it keeps you feeling full until just about lunchtime. The fiber also helps to get your digestive system going, makes you feel more energized and focused. It’s also a great snack to have on hand in the office, so bring a pre-made mason jar or two into work for the week. This will help you avoid being tempted by any snacks that may be floating around the office…we know those potato chips look appealing, but give this recipe a try first!

This is the perfect recipe to prep the night before, and if you’re making this just for yourself, it will last you a few days.

4 servings

  • 1/2 cup chia seeds

  • 1 1/2 cups almond or oat milk

  • 3 Tbsp maple syrup

  • 1/2 tsp vanilla extract

  • 1-2 Tbsp diary free yogurt add to serve to each pudding

  • blueberries

  • Mint for garnish

Instructions:

  1. In a large bowl, mix together the chia seeds, milk, maple syrup, and vanilla extract.

  2. Then, either pour into one large container, or pour into single serving mason jars.

  3. Allow the pudding to sit in the fridge for at least 4 hours or overnight.

  4. To serve, add a dollop of your favorite coconut yogurt on top, blueberries, and a few small leaves of mint.
